Tasty tomato topping
According to author Troth Wells, this mix has a really fresh taste with plenty of bite. It's particularly good with warm bread.
The flavours in this dish recreate the taste of Chile's feria (outdoor markets) where you can buy fresh fruit and vegetables in abundance.
Taken from the exciting new cookbook The Small Planet Vegetarian by Troth Wells, to help you create delicious global flavours using ingredients that are kind to the planet.
